Italian Prune
Plum Torte

  • 9 inch Springform pan, buttered and floured
  • 1 cup sugar
  • 1/2 cup butter
  • 1 cup flour
  • 1 tsp baking powder
  • 2 eggs lighty beaten
  • 16-24 prune plums, halved and tossed with 2 tbsp lemon juice
  • 3 tbsp sugar
  • 1 1/2 tsp cinnamon

Preheat oven to 350 degrees.

Cream together 1 cup of sugar and 1/2 cup butter.

Add in flour and baking powder. Beat until smooth.

Add in eggs, beat together. Spoon into pan, spreading evenly.

Place cut side of prune plums down on batter.

Combine and sprinkle 3 tbsp of sugar and the cinnamon over prune plums.

Bake 1 hour. Serves 8-10

Note: Freezes beautifully, will last up to 9 months if well wrapped.
